Marry Me Chicken – Double Sauce (Skinnytaste-Based, No Rice)

Chicken breasts cooked in a creamy tomato sauce with sun-dried tomatoes and spinach. Sauce is doubled for serving over grains (rice not included).


Ingredients

Chicken

  • 16 oz boneless, skinless chicken breast (raw), halved lengthwise
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 1 1/2 tablespoons olive oil

Sauce (Double Batch)

  • 1/2 cup sun-dried tomatoes in oil, drained and chopped
  • 2 small shallots, minced
  • 4 cloves garlic, minced
  • 2 teaspoons tomato paste
  • 8 cups baby spinach
  • 3 ounces reduced-fat cream cheese
  • 1 1/2 cups chicken broth
  • 6 tablespoons half-and-half
  • 1/2 teaspoon dried oregano
  • Pinch red pepper flakes
  • 4 tablespoons grated Parmesan cheese

Instructions

  1. Season chicken with salt and pepper and dredge lightly in flour.
  2. Heat olive oil in a large skillet over medium-high heat. Cook chicken until golden and cooked through; remove and set aside.
  3. In the same skillet, sauté shallots and garlic until fragrant. Stir in tomato paste.
  4. Add sun-dried tomatoes and spinach; cook until spinach wilts.
  5. Reduce heat to low. Add cream cheese, chicken broth, half-and-half, oregano, and red pepper flakes. Stir until smooth.
  6. Return chicken to skillet and simmer briefly to heat through.
  7. Sprinkle with Parmesan and serve.
