Marry Me Chicken – Double Sauce (Skinnytaste-Based, No Rice)

Chicken breasts cooked in a creamy tomato sauce with sun-dried tomatoes and spinach. Sauce is doubled for serving over grains (rice not included).
Ingredients
Chicken
- 16 oz boneless, skinless chicken breast (raw), halved lengthwise
- 1 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/4 cup all-purpose flour
- 1 1/2 tablespoons olive oil
Sauce (Double Batch)
- 1/2 cup sun-dried tomatoes in oil, drained and chopped
- 2 small shallots, minced
- 4 cloves garlic, minced
- 2 teaspoons tomato paste
- 8 cups baby spinach
- 3 ounces reduced-fat cream cheese
- 1 1/2 cups chicken broth
- 6 tablespoons half-and-half
- 1/2 teaspoon dried oregano
- Pinch red pepper flakes
- 4 tablespoons grated Parmesan cheese
Instructions
- Season chicken with salt and pepper and dredge lightly in flour.
- Heat olive oil in a large skillet over medium-high heat. Cook chicken until golden and cooked through; remove and set aside.
- In the same skillet, sauté shallots and garlic until fragrant. Stir in tomato paste.
- Add sun-dried tomatoes and spinach; cook until spinach wilts.
- Reduce heat to low. Add cream cheese, chicken broth, half-and-half, oregano, and red pepper flakes. Stir until smooth.
- Return chicken to skillet and simmer briefly to heat through.
- Sprinkle with Parmesan and serve.
